Recipe for dinner Spicy Veggie Quinoa

Ingredients

– 1 cup of rinsed quinoa
– 1 1/2 cups of water
– 2 large carrots that have been cut into wedges
– 3 sliced tomatoes
– 1 sliced zucchini
– 1 chopped red pepper
– Salt to taste
– 3 table spoons of olive oil
– 1 teaspoon of cayenne pepper
– 3/4 teaspoon of cumin
– A few sprigs of cilantro
– A sprinkle of agave

Instructions to prepare

Over high heat, bring the quinoa to a boil in 1 1/2 cups of water. Reduce the heat to medium, cover the pot, and let it simmer for 15-20 minutes until the water is mostly absorbed. In a skillet, sauté the zucchini and mushrooms using olive oil until tender. Add red pepper, carrots, and tomatoes and cook for an additional 2-3 minutes. Sprinkle cumin, salt, agave, and cayenne over the cooked vegetables. Stir the cooked quinoa into the cooked veggies and add cilantro.
