- 1 tablespoon rice vinegar
- 3 tablespoon of extra Virgin olive oil
- 1 tablespoon soy sauce
- 1/2 bag of frozen peas
- a small handful of goat cheese
Method
Bring a small saucepan of water to boil.
Add quinoa and cook for three minutes.
In a separate bowl combine rice vinegar, soy sauce, and 3 tablespoons extra virgin olive oil this will act as the dressing.
In the saucepan that does contain the quinoa add the peas cook for a minute to allow them to defrost.
Drain the water from quinoa and the pea’s mixture.
Add the dressing in the quinoa and peas mixture.
Divide the mixture into two different plates while still warm.
In those two plates add the goat cheese which will be the topping.
Note
If you do not have much time to prepare the meal you can use grains of quinoa 100g and simmer it for 10 minutes before you toss in the peas.
You can also use broccoli instead of peas. All you need to do is boil the broccoli in water then add the cooked grains. Let the mixture boil for about 3 or more minutes. Then drain the water off.
You can use almonds as the topping if you want the meal to be dairy-free or if you are a vegetarian.
You can also use sherry vinegar or rice vinegar.
You skip the soy sauce and season the dressing with salt instead.
If you cannot find quinoa sprouted or undercooked, use brown rice or barley instead all you need to do is adjust the time.
