- I medium-size onion, chopped
- 1lb pork, cubed(substitute ham, chicken or anything that is available)
- 3 cloves garlic. Minced
- 1 cup rice
- 1/4 tsp turmeric
- 1 cup brown lentils
- 5-6 cups of water or broth
- 1/4 cup red lentils ( adds flavor and color- optional)
- 1 tsp garam masala spice mix
- 2oz frozen spinach
- 1/4 tsp sea salt or kosher
- Splash cooking oil( olive or canola)
- Splash wine( optional)
Step #1: In a large pot, add oil and warm it over medium heat. Add garlic, onion and sauté until they become soft.
Step #2: Add spices and meat in the pot and sauté until the meat turns brown in color.
Step #3: Splash wine to deglaze the pan. (If you do not have any/ avoid cooking with alcohol)
Step #4: Combine lentils, broth and quinoa and bring it to boil.
Step #5: Turn the heat down to medium-low and add spinach. Cover and allow it to cook for 15- 20 minutes. During the cooking time, ensure that you stir it in between for about 2-3 times.
Step #6: Check if the lentils and quinoa are cooked properly. If they are not done, add more liquid as required and increase the cooking time.
