Quinoa Dish with Eggplant and Mild Yogurt

This is the dish that is made out of the fabulous book with Jerusalem by the author Yotam Ottolenghi. It is the book that is worth reading. You can eat either the whole eggplant or can scoop out the flesh and have that. You can choose to have either of the forms as per your taste. This recipe is suitable for 2 people to have.

Quinoa recipe ingredients:

– Eggplant – 2
– Ground Coriander – 2 teaspoons
– Quinoa – 150g
– Leaf Parsley – 1 bunch
– Natural Yogurt – 8 tablespoons
– Roasted pine nuts of a hand full.

Preparing a quinoa meal

This is the oven that is preheated for about 200C. You need to first make the eggplant cut into halves. There are chances for you to easily get the chances for making that in the best way possible. You need to then bake the eggplant for about 40 minutes. It is possible for you to easily get a better eggplant and can have to boil the water in the pot. There are chances for rinsing quinoa for adding boiling water. Simmer it for about 12 to 15 minutes till it can be quinoa and can be really tender. You can then toss and drain in parsley leaves. You need to then cook eggplant and then scatter the parsley mixture. You can then drizzle yogurt to finish the dish along with pine nuts.

You can then create so many variations with the dish by doing many different additions and alternatives. It is possible to add various spices like smoked paprika, baharat, ground cumin, etc with it. You can even make a tahini sauce so that yogurt can be replaced. Tahini sauce is made with adding water and lime juice to tahini in an equal amount. You can brown minced beef or lamb in the pan and then scatter that on quinoa if you want a carnivorous version. You can replace the nuts with red capsicum or red onion.
