How to prepare Quinoa Lunch Recipe with Zucchini

Are you looking for a fantastic dish to prepare for a launch or supper? Well if you never tried out some veggie quinoa and zucchini, learn how you can prepare this simple meal in just a few minutes.

If you have the following ingredients you can start to prepare this dish:

– One tablespoon of turmeric
– 2 to 3 sliced greenĀ onions
– One tablespoon of sea salt
– 5 trimmed medium-sized zucchini
– Half cup of chopped fresh flat-leaf parsley
– One cup of quinoa ( about 6 ounces) well rinsed and drained
– Two cups of cold water
– A quarter cup of lemon juice.
– One cup of sun-dried tomatoes.
– Your favorite cooking oil

Prepare


With the above ingredients, you can easily prepare a deliciously fresh and simple launch at your kitchen. To start the preparation of this recipe, heat a quarter cup of cooking oil in a large saucepan. Add zucchini, 1 quarter tablespoon of sea salt, stir until zucchini is somehow crispy. Remove zucchini from the saucepan and add your quinoa, pour some water, add one tablespoon of salt and let itĀ cook for a few minutes. Once it’s fully boiled, lower the heat and wait for quinoa to be tender and chewy with a white like a germ. Once done, remove the quinoa from the pan and put it in a bowl. Pour in some cooking oil in the saucepan, add 2 chopped onions and wait for them to turn brownish, add your sun-dried tomatoes, lemon juice, turmeric and mix well. Pour in your quinoa together with zucchini to the saucepan and mix well. Serve your dish at warm room temperature and enjoy your meal.
