You need to use rinsed 7 drained black beans of 29 oz, tomato paste of 6 oz, 32 oz of vegetable stock, one chopped onion, 5 cloves of minced garlic, 1 tablespoon of chili powder, 1 tablespoon of cumin, 1 teaspoon of oregano, 1 tablespoon of olive oil, 1 sweet potato, dry quinoa of one cup, salt, pepper, cilantro as well as avocado for making this dish.

Directions

You need to choose a soup pot that is really large enough and then heat oil in that. Add the chopped onions, saute them until they become soft as well as started turning brown. Now we can add garlic and also cook that for another 2 minutes.

The tomato paste, oregano, cumin as well as chili powder can be added for cooking to 2 minutes. Stir that continuously and also then add potatoes, stock as well as beans.

You can season the dish with pepper as well as salt. You need to then cook that for 5 minutes. Now it’s the time to add quinoa. You can cook it continuously for 15 minutes or even for 30 minutes till you find potatoes, as well as quinoa, which is really cooked well. You can add some water if chili becomes too thick that you cannot have it.

Cilantro as well as avocado can be topped to make the dish look and also taste amazing.
