How to Prepare Stir-Fried Quinoa with Veggies

Quinoa is one of the healthiest foods and the easiest meals to prepare. Have this delicious and colorful meal that is basically prepared the same way you cook rice and the same way you would make fried rice with leftover rice. The veggies can be anything you want or have in your kitchen, and as much as you like or as colorful as you want to make your day! Serve this bright and beautiful stir-fried quinoa with your top veggie picks as a main dish or a great side for an attractive and truly inviting meal.

What You Need:

  • 2 cups warm water
  • 1 cup uncooked quinoa rice
  • finely chopped garlic
  • sesame seeds
  • sesame oil
  • soy sauce

Prepare your veggies – broccoli, red bell pepper (finely chopped), diced carrot, asparagus stalk, purple onion, and ginger. You can add frozen peas (thawed for about 45 minutes) and top with green onion before serving your warm dish as you please.

What to Do:

  1. Cook rice over the stove. Use the typical 1 to 2-cup ratio, pouring 2 cups warm water first then add the cup of rice next. Then stir, cover the pot, and bring back to a boil. Turn settings to low heat then cook for about 10 to 13 minutes, rather than fully cooked through in 15 minutes since your quinoa is ideally a bit underdone, which makes it just perfect for frying.
  2. Heat a non-stick pan then add a little oil. Saute ginger and garlic, then add all veggies of your choice. Stir fry until cooked. Add a generous sprinkle of sesame seeds then mix it all together.
  3. Add your cooked quinoa rice into the pan with veggies. Mix then add some soy sauce. Mix again then add some sesame oil this time. You may add some salt, but is not really necessary with the perfect taste you’ll end up with your stir-fried quinoa with veggies!
