Today I bring you a sandwich that is a delight. It’s super yummy and awesome.
It’s as fresh and as tasty as it’s simple to make. It can be done for the weekends, after 2 o’clock in the afternoon, or after a great workout in the gym.
It’s great to make for your relatives or children when they come from school or for when you receive unexpected visits.
This snack sandwich includes these ingredients:

You can do it in different ways and use other types of loaves of bread, from English muffins to hamburger buns and croissant bread.
The essential thing is to emboss the slices of green tomatoes, pass them through flour, eggs and then breadcrumbs; then cook them in a pan or domestic fryer.
Once the tomatoes are cooked, prepare the salad, made of quinoa, spinach, and peaches.
Mix the spinach with the Quinoa and the cooked peach, or you can use the peach as it is.
This is what the peach looks like, they’re called Pickled Peaches.
3 Cups Sugar
2 Cups White Vinegar
4 Cinnamon Sticks
1 Bag IGF peaches
Method: Bring all ingredients and boil them, except for peaches. Pour over peaches and refrigerate.
Once the Pickled Peaches and the fried green tomatoes are finished, mix everything, add salt and pepper to taste, and add the dressing you want, or you can add lemon vinaigrette
15 Lemons Juiced And Zested
1 Cup of Honey
1 Cup of Rice Vinegar
1 Cup of Sugar
1# Dijon mustard
1 Bunch of fresh thyme
Method: Measure lemon juice and rice vinegar and reserve 2x that amount of oil. In a blender combine all ingredients except oil. Slowly add oil medium speed to emulsify the dressing.
Once finished, you are ready to build your sandwich.
Grab your mini-buns and open them
Put them in a pan and toast them
Once toasted, add mayonnaise to the two layers of bread
After adding the mayonnaise, add the mixed salad, spinach, quinoa, pickled peaches, the dressing or lemon vinaigrette, and add salt and pepper to taste.
